Unveiling the chemical compositioin and health benefits of vegetable oils
Authors of this article explore the chemical composition and health-promoting benefits of 39 different vegetable oils (VOs), highlighting their essential role in nutrition and disease prevention. As global concerns about health and nutrition increase, VOs have gained prominence due to their rich content of essential fatty acids (EFAs), tocols, phytosterols, squalene, carotenoids, and phenolics. These compounds contribute to various health benefits, including antioxidant activity, cardiovascular disease (CVD) prevention, anti-inflammatory effects, anti-obesity properties, cancer prevention, diabetes management, and protection of kidney and liver function.
Each vegetable oil presents a unique chemical profile, making specific oils more suitable for particular health outcomes. For instance, oils rich in unsaturated fatty acids like flaxseed, perilla seed, and rice bran oils are recommended for cardiovascular health due to their ability to lower cholesterol and improve lipid profiles. Conversely, oils high in total phenolics, such as coconut and Torreya grandis seed oils, offer superior antioxidant capabilities, protecting against oxidative stress and inflammation.
Furthermore, the review underscores the importance of choosing the right type of vegetable oil to match individual health needs. While oils like olive and almond oils are celebrated for their heart-protective properties, others like pomegranate seed oil are noted for their potent anti-cancer effects. The review also calls attention to the underutilized potential of minor vegetable oils, which, despite their smaller market presence, offer significant nutritional and therapeutic benefits.
